It is usually caused by Clostridium tyrobutyricum spores from silage-fed milk that survive pasteurization and ferment lactate into butyric acid, CO₂ and hydrogen. Plants control it with low-spore milk specs, bactofugation or microfiltration, enough salt-in-moisture, cool early ripening and, where the market allows, lysozyme or nitrate. - [Mozzarella Oiling Off & Poor Stretch: Causes and Fixes](https://dairyclinic.com/defects/mozzarella-oiling-off-poor-stretch/): Mozzarella that oils off, stretches short or blisters dark is usually stretched at the wrong pH. A pH at stretch outside the 5.15 to 5.30 window, too much or too little insoluble calcium, the wrong cooker-stretcher temperature or residence time, the cheese’s age and residual galactose are the common causes. The fix starts with the make-sheet pH curve and the bake test, then a narrower stretch-pH and temperature window. - [Fruit Yogurt Syneresis (Whey on Top): Causes and Fixes](https://dairyclinic.com/defects/fruit-yogurt-syneresis/): Syneresis is whey separating from the yogurt gel and collecting on top during storage. In fruit yogurt it usually comes from low milk solids or protein, too little heat treatment of the milk, rough handling after fermentation, or a fruit preparation whose Brix and pH do not match the white mass. Gas, domed lids and dull fruit point to yeast and mold. The fix is to balance solids, heat treatment and the fruit-prep spec together. - [Grainy Greek Yogurt: Causes of Chalky, Weepy Texture](https://dairyclinic.com/defects/greek-yogurt-grainy-texture/): Greek (strained) yogurt turns grainy or chalky when protein is aggregated too coarsely, usually from the protein standardization, the milk heat treatment, the pH at which the curd is broken, or separator and ultrafiltration settings. Weeping and low strained yield often share the same cause. A smoothing step after straining helps, but the lasting fix is in the upstream parameters. - [Sandy Sweetened Condensed Milk: Lactose Crystal Fix](https://dairyclinic.com/defects/sweetened-condensed-milk-sandiness/): Sweetened condensed milk feels sandy when lactose crystals grow too large to stay invisible on the tongue; the usual target is below about 10 µm. Large crystals come from weak seeding with fine lactose, the wrong seeding temperature, or poor cooling and agitation during forced crystallization. Thickening and browning over shelf life are often tracked together, because both depend on composition, heat load and storage temperature. - [Mold on Kashar and Cut Cheese in the Pack: Causes](https://dairyclinic.com/defects/mold-on-kashar-cheese/): Mold on kashar and cut cheese in the pack is almost always a post-process contamination: spores reach the cut surface in the cutting and packing room and grow when the seal leaks or the pack atmosphere fails. It is traced with air settle plates, surface swabs, yeast and mold counts by shift, and seal-integrity checks, then fixed through room air handling, cutting-line hygiene and packaging controls. - [Mold and Yeast on Yogurt Before Its Date: Causes](https://dairyclinic.com/defects/mold-and-yeast-on-yogurt/): Mold or yeast on yogurt before its date usually means contamination after pasteurization, most often at the filler: lids, air around the filling head, or residues that cleaning misses. Gas, domed lids and fruity off-flavors point to yeast. Plants trace it with settle plates and swabs at the filler, yeast and mold counts by lot and shift, seal checks and cold-chain records. ## Pages - [Home](https://dairyclinic.com/) - [All product challenges](https://dairyclinic.com/defects/) - [Who we are](https://dairyclinic.com/about/): food engineers with 15+ years in dairy production, R&D and technical sales. - Confidentiality: every engagement runs under a mutual NDA, so client names, logos and plant-specific results are not published.
